Hamburger Pie
I have a deep fondness for meat and potato pies. Shepherd's pie, cottage pie- each of them reminds me of chilly winter nights gathered around the dinner table with my family, digging into a big dish of steaming, creamy mashed potatoes and hearty, flavorful meat.
But kids like burgers, and when I had kids of my own, I had to learn that fast! So what better way to combine a taste from my childhood and their favorite food than with cheeseburger pie?
The best part about this recipe is that once the pieces are assembled, all it takes is a quick pop in the oven and it's ready to serve! If you like the classic Impossible Cheeseburger Pie without Bisquick as the filler, or want to try a great cottage pie recipe with ground beef, this is the place for you.
Hamburger Pie Recipe Ingredients
- Pie crust
- Ground beef
- Burger seasoning
- Cheddar cheese
- Mashed potatoes - leftover mashed potatoes work perfectly!
- Canned diced tomatoes with green chilies
- Salt and pepper
- Fresh tomatoes
Cheeseburger Pie Recipe Instructions
- Preheat the oven to 425°F, and place the pie crust in a deep 9-inch pie dish. Using a fork, poke holes in the bottom of the crust. Pre-bake the crust for 7 minutes.
- While the crust is baking, combine the ground beef and burger seasoning in a large skillet and brown the beef.
- Drain the liquid from the pan, then add the can of tomatoes and chilies. Cook for another 2 minutes and drain the liquid again.
- Add the ground beef to the pie crust, then top with the prepared mashed potatoes in a smooth layer. Finish with the shredded cheese, salt, and pepper.
- Return the pie to the oven and cook for 10 minutes, or until the potatoes are hot and the cheese is melted and bubbly.
- Remove from the oven, top with slices of tomato, and serve!
Burger Pie Tips
- This recipe is a perfect way to make use of leftover mashed potatoes, or you can make them fresh for the pie! In a pinch, for an ultra-fast pie, use a packet of instant mashed potatoes and 2 cups of water- just be sure to taste and season it heavily.
- Feel free to add as many seasonings as you'd like! I highly recommend my recipe for burger seasoning, as it will add so much depth of flavor to the ground beef.
- This is a great make-ahead recipe that can be stored cold until it's ready to serve, then popped into the oven for 15-20 minutes or until heated through.
Impossible Cheeseburger Pie Toppings
- Mushroom Swiss Cheeseburger Pie: Add sliced mushrooms to the ground beef while it cooks, and swap out cheddar for shredded Swiss or Gruyere cheese.
- Santa Fe Cheeseburger Pie: Add diced jalapeno peppers, a squeeze of lime juice, and onion to the ground beef mix, then top the baked pie with slices of fresh avocado and a garnish of cilantro! Yum!
- Cowboy Burger Pie: Add bacon crumbs and sriracha to the ground beef, then top the potatoes and cheese with French onions. When it's all done, add sliced fresh avocado and spicy mayo!
Hamburger Pie Recipes FAQs
The classic Impossible Cheeseburger Pie, made famous by Bisquick, includes ground beef, cheese, tomatoes, and Bisquick pancake mix. This variation changes things up by using a pie crust instead of Bisquick and topping it with mashed potatoes to make it almost like Shepherd's pie!

Ingredients
- Pie crust pre-made
- 1.5 lb. Ground beef
- 8 oz Cheddar cheese
- 2 cups Mashed potatoes leftover, instant, or fresh
- 3 Tablespoons Burger seasoning one recipe serving
- 1 can Diced tomatoes and green chilies
- Salt and pepper to taste
- 1 medium Tomato sliced
Burger Seasoning:
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 Tablespoon Paprika
- 1 teaspoon Onion powder
