    Keto Hamburger Casserole

    Ground beef recipes just don't get any better than this these. They're low-carb and gluten-free, but don't skimp out on any flavor!

    We know the struggle with getting kids to eat anything "healthy". That's where low-carb hamburger recipes come in. They use simple ingredients you probably already have on hand, and even picky eaters love it! It's the perfect way to hide veggies in a wholesome low-carb dinner the whole family will enjoy!

    Hands down the absolute best hamburger casserole I have ever made. The fact that it was keto was an added bonus!

    Hamburger Casserole Ingredients

    • ground beef 
    • olive oil 
    • onion powder
    • garlic powder
    • Dijon mustard
    • tomato paste sugar-free
    • ground pepper
    • salt
    • eggs
    • heavy cream
    • cheddar grated
    • green beans canned or frozen

    How to Make Hamburger Casserole

    1. Grease a 9×13″ baking dish with olive oil and set it aside. Preheat your oven to 360°F.
    2. Place ground beef, onion powder, garlic powder, Dijon mustard, tomato paste, ground pepper, and salt in a large bowl. Stir well until combined.

    3. Heat olive oil in a large skillet. Add the ground beef mixture and cook for about 10 minutes, breaking it up as it cooks, until it browns completely.

    4. Drain any grease from the ground beef. Add the cooked ground beef mixture to your prepared baking dish in an even layer.

    5. Spread canned or frozen green beans over the beef.

    6. In a medium bowl, beat eggs. Add heavy cream and a pinch of salt and mix together.

    7. Evenly pour this mixture over the meat and green beans.

    8. Spread grated cheddar over the top of the beef and green bean mixture.

    9. Bake for 25-30 minutes, until the cheese, is golden brown. Serve, and enjoy!

    Keto Hamburger Recipes Tips

    • Sugar-free tomato paste: Make sure your tomato paste is sugar-free. You can substitute it with sugar-free ketchup.
    • Using frozen green beans: If using frozen green beans in your keto ground beef casserole, you do not need to thaw them. They will cook completely when baking.

    This was amazing! I only had one can of waxed beans so I added a can of corn… delicious!

    Can I make hamburger casserole ahead of time?

    Yes! A low-carb hamburger casserole is a perfect make-ahead dinner idea. Prepare everything in the baking dish, wrap in foil, and then save to bake later. If you have a friend who's about to have a baby, this is a perfect recipe to surprise them with. They can pop it right in the oven and be done with it! With 8 total servings, they'll have plenty of leftovers to enjoy. This is one of the best easy keto ground beef recipes for potlucks and parties, too!

    Can keto hamburger casserole be frozen?

    Yes! Prepare everything as instructed and layer in the baking dish. Then, either bake and then freeze, or freeze before baking. If freezing before baking, add an additional 15 to 20 minutes to the baking time when you're ready to cook it. If you freeze it after baking, thaw it in the fridge overnight, and then heat it back up in the oven for 15 to 20 minutes.

    • Mix with ground pork: You can use ground pork in addition to beef for extra flavor. Use a mixture of 1 pound of ground beef and 5 ounces of ground pork if you would like to use pork.

    • 1½ cups cheddar grated

    Instructions

    • Grease a 9 by 13-inch baking dish with olive oil, and set aside. Preheat oven to 360℉. Add ground beef to a bowl with onion powder, garlic powder, Dijon, tomato paste, ground pepper, and salt, and stir to combine.

      Where did you find sugar free tomato paste? I am making this recipe tonight but don’t see any in stores.

        Hi Nicole! The can itself might not say 'sugar-free' on the front, but generally the organic tomato paste varieties won't have any sugar added (it will say no sugar added on the back of the label). You can also order tomato paste if you're not able to find it! Sugar-free ketchup works too! Hope this helps - please enjoy!

      I don't like the bitter taste of tomato paste. Can I use tomato sauce. Do I drain the hamburger grease or leave it in?.

        Hi Linda! You can absolutely use tomato sauce if you prefer. Tomato paste has a thicker consistency, though, so a better choice might be ketchup or tomato puree. Please enjoy!

          Be extra careful using ketchup!! There is/or can be a lot of sugar in ketchup. I am actually going to try this recipe and use mustard. As there are no carbs in mustard and so many variations of mustard you can use. Additionally, I'm thinking of substituting the green beans for onions and a bit of jalapeños. This is a GREAT recipe I just would rather put my carbs where I would enjoy them more. Any advice in my substitutions?

            Hi Kodi! We recommend sugar-free ketchup as a substitute, rather than regular ketchup. Mustard as a substitution sounds like a great idea to me, though the recipe already calls for Dijon and you may want something a little more sweet to balance it out. If you're concerned about the tomato, you could also use less of it and more mustard to balance it out to your liking. Onions and green beans sound like great substitutes! I hope you enjoy it!

      I make this same recipe except I spread mashed potatoes over the top then I put it in the oven at 375° for 45 minutes. I know to be "Keto" correct you wouldn't use the mashed potatoes but I've been fixing this for my family for years. It's a family favorite

      Amazing!
      This recipe is so easy to make and utilizes ingredients that I always have on hand. I make this about once a week and my family doesn't get tired of it. While trying to find something to cook for family that was visiting from our of town my husband suggested I make this and it was a hit, I had to share the recipe.
      This is perfect just the way it is but after making it so many times, I started adding canned diced tomatoes.

        It does! Prepare and layer it in the baking dish as instructed. You can either freeze it before baking, or after.

        If you want to freeze it before baking, simply freeze it tightly wrapped in plastic wrap and foil labeled with the freezing date. When ready to cook, add an additional 15 to 20 minutes to the total baking time. You can bake it straight out of the freezer this way.

        If you want to freeze it after baking, let it cool completely before storing it. Wrap it tightly in plastic wrap, then foil, and label with the freezing date. When ready to enjoy, thaw it in the fridge overnight, then heat it back up for 15 to 20 minutes in the oven at the original baking temperature.

      We’re not a fan of green beans so we used asparagus cut up. And instead of using one spoon of a whole can of tomato paste are used catch up. Turned out awesome. Definitely going to be one of our favorites going forward!

      I used lean ground beef and frozen green beans but my casserole ended up with so much grease it was over the cheese. I read previous comments saying to not drain the beef but I think it is a necessity.

        Hi Linda! It should be fine cooking with the casserole in the oven. Broccoli doesn't take much time to roast, so you can add it to the casserole as is and it will cook with the rest of the meal. Though if you'd like, I think it would probably also be fine to boil it ahead of time if you aren't sure. But I wouldn't say that's necessary at all.

        Hi Linda! You could definitely make this earlier in the day, then bake later. That would work out perfectly. I would store it in the baking dish, wrapped in plastic wrap so it's ready to bake when you need it.

      Wow! This is superb! I’m already drooling over it. I'm definitely gonna make this next time I get ground beef. But sharing just a little thought, you can use ghee in place of olive oil. Ghee instantly adds to the flavor and its nutty aroma enhances the taste!

      This dish was a hit! I will be adding it to my rotation. I drained the fat from my beef (I used 80% lean beef) and cooked a chopped onion into it before assembling the casserole. Quick, tasty and everyone was full. I'm thankful I didn't have to make any side dishes. Though, I put some fries in the air fryer for myself and stepdaughter since my husband is the one following the keto diet 😉

      I'm just coming back to say that I still make this regularly and my family still loves this dish!
      I have small children so I have to make the most of my time. I always make this early in the day (morning nap time for the kids) and cover it in the fridge. Then all I have to do is pop it in the oven 30 minutes before dinner time.
