Sous Vide Filet
Have you ever cooked steak sous vide? After trying it with this filet mignon recipe, we can safely say we're hooked! Water bath cooking is an easy way to cook beef to the perfect temperature every time. You will never overcook your steak using this method, so it's perfect for cuts of beef like this filet or beef tenderloin!
Sous vide cooking is so easy! There's no need for a vacuum sealer. All you need is an immersion cooker, a zip-lock bag, a pot full of water, and a skillet. Season and seal your steak in the bag, clip it to the pot, and cook for an hour, completely hands-free.
One of my favorite recipes is my sous vide prime rib! It is absolutely perfectly cooked using the sous vide method.
What is Sous Vide Cooking?
A Sous Vide Cooker cooks food vacuum-sealed in a water bath. This makes it easy to cook food to your desired degree of doneness with no chance of overcooking!
Sous vide cookers are also known as precision cookers or immersion cookers.
All you do is attach the machine to a pot of water, select the time and temperature, then place your food sealed in a bag in the pot of water to cook. It is the easiest and best way to cook pork!
Filet Mignon Sous Vide Ingredients
- filet mignon steaks 1.5-inch thick
- butter
- Chicago steak or steak seasoning of your choice
- minced garlic
How to Sous Vide Filet Mignon
- Generously season filet mignon steaks using Chicago steak seasoning or steak seasoning of choice. Pat the seasoning down.
- Place the filet in a plastic zip-lock bag and press the air out. Seal tightly.
- Clip the bag with the filet into the inside of a pot of water with the sous vide cooker attached. Fully submerge the bag in the water and sous vide for 1:45 at 130°F.
- Remove the filet from the bag and place it on a separate plate. In a skillet over medium heat, melt butter and cook minced garlic.
- Sear filet on all sides until golden brown, just a couple of minutes per side. Slice against the grain, serve, and enjoy!
If you are new to sous vide, it is easy to be intimidated. Once you try it, it becomes so easy and the best way to easily cook a steak to the perfect temperature every time.
Sous Vide Filets Recipe Tips
- Make sure to squeeze all of the air out of the zip-lock bag after placing your steaks in the bag, and check for any holes where water might be able to get in.
- Clip the bag to the side of the pot to keep it in place. This is super important. You can use any clip you have on hand, like a chip bag clip. This way, the bag will stay in place and keep your food perfectly submerged.
- On that note, make sure your filet is fully submerged in the water so it cooks evenly. Use a pot that's large enough to hold enough water to fully submerge your steak.
- Make sure your bag is tightly sealed with the air removed and no possibility for water to leak in!

Sous Vide Filet Mignon FAQs
I recommend cooking pork chops at 130°F. This will give you perfectly tender, juicy meat, and they only have to stay in the sous vide cooker for at least 1 hour.
They can stay in the water bath for up to 4 hours and will not overcook. They will stay at the same temperature throughout. That’s the magic of sous vide!
The only chance of overcooking is if you sear for too long or if the temperature is set too high. Following our instructions, you will never overcook it using this method!
How to Reheat Sous Vide Filet
You can reheat your steak right in the sous vide machine! Reseal the leftover filet in a plastic bag and cook for 1 hour at the same temperature you cooked it to; in the case of this recipe, 130°F.
