Pulled Pork Taco Recipe
I love pulled pork. One pork loin roast makes a mountain of spicy, juicy pulled pork effortlessly in the slow cooker, ready to be used for flatbread, pork bowls, sandwiches, salads, and of course, tacos!
And if your family is like mine, pulled pork tacos will be a regular on the dinner table after the first bite! Tender meat and savory, spicy pulled pork taco sauce combine into succulent and irresistible tacos you're going to want to serve again and again. Better stock up on pork loin, because you'll be making more!
But what are pork tacos without all the incredible toppings? Avocado, jalapenos, fresh corn salsas, spicy onions, cheese and lime- the possibilities are limitless! Or keep it simple and classic and serve your pulled pork tacos with slaw for a fresh, crisp crunch.

- Finish the taco off with diced avocado and a squeeze of lemon juice, and serve!
Slow Cooker Pork Taco Tips
- Don't make the same mistake I always do- use less of each topping than you expect! There are a lot of toppings in these tacos and each one goes a long way, so just use a little of each or else the tacos will be falling apart.
- I like to use the same sauce my pulled pork was cooked in for drizzling. Typically this is either BBQ or teriyaki, and I suggest trying both!
- I like these tacos most with hard shells, but soft shell works great too. Or, turn them into delicious pulled pork burritos!
Pulled Pork Tacos Variations
- Teriyaki Pork Tacos: Swap out the BBQ sauce in the pulled pork recipe for teriyaki sauce for this great twist on the classic! I can't recommend this enough, the mix of sweet and savory is too good to miss.
- Smoked Pulled Pork Tacos: If you have a smoker, you have to try Smoked Pulled Pork! It's so tender you won't believe it, and the flavor of pulled pork infused with smoke is second to none.
- Pulled Pork Tacos with Slaw: Another favorite variety that requires less toppings! Whip up a batch of coleslaw or buy some from the store and no other toppings will be required- the tender, soft pork mixed with crunchy, creamy coleslaw is all you need.
Pork Loin Tacos FAQs
Pulled pork tacos are filled with tender, soft meat, so toppings that add crunch are ideal! I tend to use lots of fresh vegetables like onion, corn, and jalapeno, and top it off with creamy elements like avocado and sour cream.
The protein in carnitas and pulled pork are the same, as both are slow-cooked pork shoulder that's shredded after being cooked. However, carnitas is a Mexican slow cooked pulled pork recipe where the meat is cooked alongside peppers and onions and the liquid that's used is more likely to be citrus juice.
The secret to the most tender pulled pork is cooking the meat for a long time! As the meat cooks, the fibers will very slowly break down until even the toughest meat is silky soft and falls apart. If your pork is tough, let it cook in its juices for another hour and test again.
