Chipotle Steak Recipe
If you've been to a Chipotle lately, you may have noticed a new item on the menu making waves: spicy, smokey Garlic Guajillo Steak! As soon as I tried it, I knew I needed to get home and make my own spin on it.
The product of my experimenting is this: a tender, mouth-watering marinated flank steak using a simple but unbelievably flavorful combination of tangy lime, fragrant garlic and sweet-and-spicy guajillo peppers! And by making it at home, you can achieve perfectly tender steak cooked just how you like it.
The best part? This fully-flavored flank steak recipe is as easy as it gets. Blend up a quick marinade, let it sit, give it a quick cook in a pan, and you've got perfectly juicy steak bursting with flavor in no time. Serve it with rice, black beans, and avocado salsa!

Garlic Guajillo Steak Ingredients
- Flank steak
- Dried guajillo chiles
- Garlic
- Cilantro
- Lime juice
- Sea salt
- Avocado oil

How to Make Guajillo Steak
- Wearing gloves for protection, remove the stems and seeds from the dried chiles.
- Add the chiles to a saucepan with enough water to cover them, and simmer for 20 minutes. Reserve 1 cup of the liquid, then add the simmered chiles, reserved liquid, cilantro, garlic, lime juice, and salt to a blender, and blend until totally smooth.
- Place the steak in a plastic bag, then pour the blended marinade over it. Seal the bag and squeeze it until the steak is well coated. Place the bag in the fridge for at least 5 hours or overnight.
- Remove the steak from the fridge and let come to room temperature, about 20 minutes. In the meantime, heat the oil in a large skillet over high heat, then sear the steak on each side for 3 minutes or until browned.
- Continue cooking until the internal temperature meets 130°F, then remove and rest on a cutting board, covered in foil, for 10 minutes.
- Slice the steak against the grain, then add to tacos, rice bowls, and more! Best served with avocado salsa on the side.
Marinated Flank Steak Tips
- Make sure to let the steak marinate for at least 5 hours. It's tempting to cook it early, but the marinade contains acid that will tenderize the steak if you let it sit, resulting in ultra tender and juicy meat.
- Pull the meat off the stove when it's 5 degrees below your target temperature- I like my steak medium rare, so I pull it off at 130°F. It will finish cooking as it rests!
- If you like your steak extra spicy, add a few of the seeds from the peppers. That's where all the spice is!
- Make sure to serve this incredible steak with Avocado Salsa on the side- it's a match made in heaven!
- Always make sure you're wearing gloves while handling peppers to avoid being exposed to the oils, which can cause a burning sensation on skin.
- Simmering the chiles releases steam that can tingle or cause a burning sensation on contact with skin. Keep your face away from the steam to prevent any discomfort!

Guajillo Garlic Steak FAQ
Guajillo steak is flank steak marinated in a mixture of lime juice, garlic, cilantro, and most importantly, dried guajillo chiles! The steak is left to marinate for several hours before being grilled or seared and sliced for dishes such as tacos and rice bowls.
Relying on the marinade for flavor, guajillo steak has a strong and aromatic flavor of garlic, cilantro, tangy lime, and a sweet and smokey richness lent by the guajillo chiles. These chiles have a very classic chile flavor without being too spicy, lending itself well to the beef.
Typically, guajillo steak is made with flank steak, though any cut with fairly significant connective tissues can work well. Just avoid lean cuts like filet mignon, as the key feature of this steak is its tenderizing marinade, which will be less effective on lean meats.
Despite the heavy use of chiles, guajillo steak is not particularly spicy! While it has some heat, the removal of the seeds from the chiles keeps it fairly mild, and guajillo chiles are already a fairly mild pepper. Instead this meat has an even, warming heat.
