If you don't have the time to cook a roast traditionally or in the slow cooker, or just want it to be done more quickly, the Instant Pot is a total lifesaver. It takes just an hour to cook Instant Pot Mississippi Pot Roast, and then under 30 minutes to release the pressure and serve.

Instant Pot Mississippi Roast FAQs
How long a roast takes to cook in the Instant Pot depends on the size of the roast. Account for about 15 minutes of cook time per pound when cooking roast beef in the Instant Pot. Then, naturally release the pressure for 15 minutes to finish cooking the beef. For this 4 lb. roast, we cook on high pressure for 60 minutes, then naturally release the pressure for another 15.
It is possible to overcook a chuck roast in the Instant Pot. I recommend using 15 minutes per pound and checking with a meat thermometer for doneness if you're cooking a larger or smaller piece of meat. You can always add more cook time if it's not done to your liking, but once it's overcooked, it's overcooked.
Instant Pot Mississippi Pot Roast Ingredients
- Rump or chuck roast
- Pepperoncini peppers
- Unsalted butter
- Dry ranch seasoning packet
- Dry au jus gravy packet
The ingredients to make Instant Pot Mississippi Roast are simple, but so flavorful! I love the combination of the ranch seasoning with au jus, beef and pepperoncini peppers. It is incredible!
How to Make Instant Pot Rump Roast
- Add your roast, pepperoncini peppers, butter, ranch seasoning, and au jus gravy to the Instant Pot. Secure the lid and cook on high pressure for 60 minutes.
- When 60 minutes is up, allow the Instant Pot to naturally release pressure for 15 minutes. After 15 minutes, carefully release any remaining pressure, and remove the lid.
- Shred the roast using two forks. Serve with any remaining liquid at the bottom of the pot, and enjoy!
Mississippi Roast Recipe Tips
- You can use a packet of brown gravy mix instead of au jus if desired. This will create a thicker gravy.
- Rump roast is slightly more tender than chuck roast, so I recommend giving it a try. However, you can use either rump roast or chuck roast for this dish.
- To make gravy out of the Instant Pot roast drippings, measure out a cup of the drippings from the pot. Whisk it together with 2 Tablespoons cornstarch mixed with ¼ cup water, then simmer in the Instant Pot on saute mode for several minutes until thickened to your liking.
