Meatloaf Sauce Recipe Ingredients
- Tomato paste
- White vinegar
- Meatloaf seasoning: dried mustard, salt, paprika, dried basil, black pepper, garlic powder, onion powder
If you're mixing your meatloaf sauce into the beef, I recommend also using olive oil, parmesan cheese, eggs, and milk.
How to Make Meatloaf Glaze
- Mix together tomato paste and white vinegar with dried mustard, salt, paprika, dried basil, pepper, garlic powder, and onion powder.
- Mix directly into meatloaf, or glaze finished meatloaf. Alternatively, store for 3-4 days until ready to use.
Glaze for Meatloaf Tips
- If you're baking meatloaf in the oven, add the glaze in the last 10-15 minutes of cook time to allow it to caramelize for the best flavor. I like to add two layers of meatloaf sauce: one at the beginning of the cook time, and another in the last 10-15 minutes.
- The meatloaf seasoning used in the glaze can be made months ahead of time and stored in a jar.
- Use a pastry brush or the back of a spoon to glaze meatloaf evenly for best results.
- Always let meatloaf rest at least 15 minutes before slicing it so it has time to set.
Meatloaf Topping Recipe FAQ

Instead of ketchup, this meatloaf glaze recipe uses tomato paste, which has a nice strong tomato flavor. Ketchup tends to be sweeter with added sugar content, so if you want a sweeter glaze, use ketchup.
