    Best Crockpot Beef Tips and Gravy

    Out of everything I make for my family, slow cooker meals like this beef tips recipe may be my favorite. There is nothing like coming home after a long day to find dinner waiting for you, especially when it is as deeply flavorful as slow cooker beef tips and gravy.

    After cooking low and slow, the beef tips become as tender as butter and full of rich flavor, especially combined with homemade red wine gravy with mushrooms. The taste is incredible, and the aroma that fills your house after cooking this meal all day is just irresistible!

    Crockpot beef tips and gravy is honestly one of the most rewarding dinners you can make your family. Set it up to cook in the morning, and enjoy a heart-warming dinner together in the evening. This is the kind of magical dish that makes memories!

    Slow Cooker Beef Tips Ingredients

    • Beef round roast: Budget-friendly round roast is a great choice for slow cooker and pot roast recipes. Cooking it low and slow gives you the most tender, delicious beef tips. You can also use cubed chuck roast or any stew meat of your choice.
    • Garlic cloves: For this recipe, peeled whole garlic cloves are placed in the slow cooker over the beef tips for supreme flavor.
    • Thyme: You can use fresh thyme or dried thyme in this beef tips recipe. If you're using dried thyme, use about ¼ teaspoon.
    • White mushrooms: Sliced white mushrooms are budget-friendly and easy to work with, but you can also use cremini mushrooms or mixed mushrooms. Make sure to clean your mushrooms by patting them down with a damp paper towel.
    • Beef base and water: Use a combination of beef base and water to make these beef tips. A beef base is found in the soup aisle and gives the creamy mushroom gravy a deeper, richer flavor. Better than Bouillon is a good example of a beef base to use. You can substitute 1½ cups beef stock in place of using a combination of beef base and water. For best results, use beef stock - don't use broth.

    How to Cook Beef Tips in the Crockpot

    1. Season cubed bottom round roast with salt and pepper. Melt butter in a skillet over medium-high heat, then add the beef. Allow it to sear for 4 minutes on each side to give it a caramelized coating. Once seared, add the beef tips to your slow cooker. Top with yellow onions, peeled whole garlic cloves, and dried or fresh thyme.

    2. Reduce the heat of the skillet to medium and melt butter. Add sliced mushrooms with a pinch of salt and stir to coat with the butter. Saute for 5 minutes, until the mushrooms are soft. Stir occasionally, scraping up the brown bits from the bottom of the pan.

    3. Add water and beef base to the skillet and stir to combine. Then, add the contents of the skillet to the slow cooker with your beef tips. Cover your crockpot and cook on low for 5 hours, or on high for 2 ½ hours, until the beef is fork-tender. If you have more time, you can cook for 6 hours for even greater flavor.

    4. Finally, once the beef tips are done cooking, combine red wine with cornstarch and add it to the slow cooker. Turn heat up to high and cook for 20 minutes to thicken the gravy. Alternatively, add the gravy to a skillet over medium heat along with cornstarch and red wine, and heat until thickened (this only takes a minute or two). Serve over mashed potatoes, rice, egg noodles, or roasted vegetables, and enjoy!

    • Scrape up those brown bits from the bottom of your skillet! This will add so much flavor to your mushroom gravy and beef tips.
    • You can cook this slow cooker beef tips recipe on low or high heat. If you cook on low, cook for 5-6 hours until tender. On high, you can cook this recipe in as little as 2½ hours. If you have the time, though, I recommend letting it cook for longer for the most tender beef tips.
    • Adding the cornstarch and red wine thickener at the end makes a big difference in the flavor of the dish. You can thicken the gravy in the slow cooker for 20 minutes, or add it to a skillet and quickly thicken it. Either way, this should be done at the end, just before serving, for the best flavor.
    • Use beef base and water, or beef stock, for the best results, and not beef broth.

    Beef tips can be the same cut as stew meat, though they are generally cut from the tenderloin or sirloin, and not chuck or rump roast like stew meat. Because this is a slow cooker beef tips recipe, stew meat is perfect to use, as it has plenty of time to cook until perfectly tender.

    • 1½ pounds beef round roast cut into chunks
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon unsalted butter
    • 1 yellow onion sliced (about 1 cup)
    • 5-6 whole garlic cloves peeled
    • 1 sprig fresh thyme or ¼ tsp. dried thyme

    Mushroom Gravy

    • ½ tablespoon unsalted butter
    • 8 ounces sliced white mushrooms
    • 1 pinch salt
    • 1½ cups water
    • ½ tablespoon beef base or beef stock; don't use water if using beef stock
    • 1 tablespoon red wine
    • 1 tablespoon cornstarch

    Instructions

    • Season 1½ pounds cubed bottom round roast with 1 tsp. salt and ½ tsp. pepper. Melt 1 Tbsp. unsalted butter in a skillet over medium-high heat, then add the beef.
      Allow it to sear for 4 minutes on each side to give it a caramelized coating.
      Once seared, add the beef tips to your slow cooker.
      Top with 1 sliced yellow onion, 5-6 peeled whole garlic cloves, and ¼ tsp. dried or 1 sprig fresh thyme.

    • Reduce the heat of the skillet to medium and melt ½ tablespoon unsalted butter. Add 8 ounces sliced mushrooms with a pinch of salt and stir to coat with the butter.
