Using cooked brisket, this easy macaroni and cheese recipe is ready in just a few minutes more than it takes to cook a box of pasta!

    One of my favorite dishes of all time to make from scratch at home is macaroni and cheese. My family loves mac and cheese - there is nothing like a warm, comforting bowl of cheesy, creamy goodness after a long day! The best thing about mac and cheese recipes is how you can add anything you like to them to mix them up.

    This brisket mac and cheese recipe is a perfect example of how you can take your average macaroni and cheese recipe to the next level. Packed with smoky brisket, plenty of cheese, seasonings, and diced green chilies, this easy mac and cheese recipe is as flavorful as it gets.

    The best part? It takes just a bit longer than it takes to cook a box of pasta, and you can use your own brisket leftovers to make it. In fact, this is one of my personal favorite leftover brisket recipes! I guarantee you will savor every bite of it!

    Brisket Macaroni and Cheese Ingredients

    • Macaroni noodles of your choice
    • Butter
    • Flour
    • Minced dried onion
    • Smoked paprika
    • Salt and pepper
    • Milk
    • Pepper jack cheese, shredded
    • Gruyere cheese, shredded
    • White cheddar cheese, shredded
    • Smoked cooked brisket, chopped - use my recipe for juicy Smoked Beef Brisket or Slow Cooker Beef Brisket
    • Green chilies, diced

    How to Make Brisket Mac and Cheese

    1. Cook pasta according to package directions. Drain, then place it back in the pot.

    2. In a large skillet, melt butter over medium-high heat. Whisk in flour and seasonings, cooking for 1 minute.

    3. Gradually whisk in milk and bring the mixture to a boil. Cook, stirring constantly, until thickened.

    4. Remove from heat and whisk in your shredded cheeses. Stir in brisket and green chili.

    5. Add macaroni and cheese sauce with brisket to the pot of pasta and mix together thoroughly until everything is combined and nice and creamy. Enjoy!

    Brisket Macaroni and Cheese Tips

    • You can use any variation of macaroni noodles you prefer to make this dish. I use more than just elbow macaroni - I love radiatore, fusilli, conchiglie, orecchiette, cavatappi... you get the idea! Any shell-shaped pasta or macaroni-like noodle will work well for homemade macaroni and cheese.
    • Make sure to stir constantly when cooking the milk and whisking in the cheese. You do not want the dairy to curdle.
    • Any brisket you make to later use with this recipe will go best with my Brisket Rub. Trust me, it is the best seasoning for brisket!

    Is it possible to make gluten-free mac and cheese?

    By using gluten-free flour instead of regular flour for the roux, and by replacing pasta with a gluten-free alternative, you can make gluten-free brisket macaroni and cheese. If you want the flavors of brisket mac and cheese but struggle with gluten-free pasta, try making this dish with rice instead. Cheesy rice with brisket is delicious!

    Is brisket mac and cheese spicy?

    Brisket macaroni and cheese is mildly spicy, but not overwhelming. If you want a little less spice, use a little less green chilies or replace it with a non-spicy ingredient such as finely diced green bell peppers.

    • 1 lb dry macaroni noodles
    • ½ cup butter cubed

    • 1 teaspoon dry onion minced
