    Best Grilled Prime Rib Recipe

    Prime rib recipes are a specialty of mine. I make it every year for my family and friends over the holidays, and love coming up with new ways to prepare it as a surprise. I've prepared it every way from roasting a classic rib roast in the oven to cooking it sous vide and smoking prime rib, so grilling it seemed like the obvious choice to try next!

    I am thrilled to tell you prime rib on the grill was not only a success but one of the most delicious preparations of prime rib I have ever tried. The coffee rub creates a stunning, flavorful crust while cooking it on the grill giving the beef that smoky flavor we all know and love.

    Grilled prime rib has become one of my favorite holiday prime rib recipes. I know when you try it, you'll agree that it's a stand-out! Give it a try this year and let me know what you think!

    Grilled Prime Rib Recipe Ingredients

    • Prime Rib Roast, I used bone in. Both bone-in and boneless will work well.
    • Brown Spicy Mustard
    • Coffee Rub

    Coffee Rub Recipe

    My Coffee Rub Recipe is easy to mix together and tastes incredible on a grilled rib roast. When paired with the Dijon mustard gives the rib roast the most delectable crust.

    My traditional prime rib seasoning will also work well on this recipe.

    How to Cook Prime Rib on the Grill

    1. Allow your prime rib roast to come to room temperature; this should take a little under 2 hours. When ready, preheat your grill to 275-300 degrees Fahrenheit.
    2. Rub every inch of your prime rib roast with spicy brown mustard.

    3. In a small mixing bowl, combine ground coffee, paprika, granulated garlic, minced onion, brown sugar, black pepper, and salt. Whisk well.

    4. Add the coffee rub to the rib roast and cover it completely. Let it sit for 20 minutes to soak up the rub.

    5. Once grill is preheated, place prime rib on the grill and cook for 2 hours and 45 minutes, or until the internal temperature reaches 130 degrees Fahrenheit on a meat thermometer.

    6. Allow the roast to rest for 15-20 minutes, then slice, serve, and enjoy!

    Grilling Prime Rib FAQs

    How long does it take to grill prime rib?

    A 4-pound rib roast will take approximately 2 hours and 45 minutes to grill to medium-rare at 130 degrees Fahrenheit. If you're serving a larger roast, you will have to cook it for longer. To do that, use a meat thermometer to check the temperature of the roast periodically after 2 hours and 45 minutes - you want it to come to 130 degrees Fahrenheit before pulling it off of the grill.

    What is the perfect temperature for grilling prime rib?

    Grill prime rib at 275-300 degrees Fahrenheit for best results.

    Should prime rib be covered while cooking?

    When grilling prime rib, place the roast fat side up on the grill and close the lid. Keep it closed during the cooking time until you need to check the temperature of the roast.

    How long can you keep a rib roast in the fridge before cooking?

    You can keep an unseasoned rib roast in the refrigerator for 3-5 days before cooking.

    Should you salt prime rib the night before?

    You do not need to salt prime rib the night before, but do let it sit after seasoning it for at least 20 minutes before grilling.

    How much prime rib per person do I need?

    You will need about ½ a pound per person when the roast is part of a holiday buffet, or ¾ pound per person if it’s the main course. A 4-pound prime rib will serve approximately 6 people.

    Sauce for Prime Rib

    Prime rib is at its best when served with a sauce. Try a classic au jus. You can collect the drippings from the prime rib roast on the grill by adding an aluminum roasting pan under the grill rack to catch the drippings.

    I also love Horseradish Sauce on top of my grilled prime rib. It is an amazing combination of flavors.

    Grilled Prime Rib Recipe Tips

    • Your focus should be less on time and all on the internal temperature of the meat. This means, you can have any weight, as far as the meat is concerned, as long as it’s 130 degrees before it comes off the grill. This may take more or less time, depending on the size.
    • You’ll want to skip using the burners in the middle of your grill and use the two burners on the sides. Start them at low and then work your way up to the desired temperature.
    • Don’t try to rush the cooking of this cut of meat, on a grill. It needs to cook slowly as it’s very thick. If not, it will cook unevenly.
    • If you want to skip the grill, you can cook it the same exact way, at the same exact temperature, in the oven.

    Serve with Horseradish Sauce for Prime Rib and Au Jus for Prime Rib!

      It look easy to do n it might take less time for my prime rib to cook being I like my meat medium rare or but mostly rare.

      This recipe is outstanding and delicious! I wasn't sure about using ground coffee, but it added a wonderful richness. I used the mustard first and the crust on the meat was perfect. I made all the rub, (cutting the salt to 1 t for health reasons). My 4.4 lb roast could not hold it all, so I saved some for another day. I cooked it indirect on our Weber gas grill and kept the temperature inside the lid at 300 degrees. I cooked it to 130 degrees internal temperature and let it sit for 15 minutes. Perfectly pink inside and very tender!
