Prime Rib on the Grill
Save room in your oven for your side dishes and desserts by grilling prime rib. I'll show you how to grill prime rib roast so delicious, you'll want to make it this way every year!
Prime rib recipes are a specialty of mine. I make it every year for my family and friends over a holiday dinner, and I love coming up with new ways to prepare it as a surprise. I've prepared it every way, from roasting a classic rib roast in the oven to cooking it sous vide and smoking prime rib, so grilling it seemed like the obvious choice to try next!
I am thrilled to tell you prime rib on the grill was not only a success but one of the most delicious preparations of prime rib I have ever tried. The coffee rub creates a stunning, flavorful crust while cooking it on the grill, giving the beef that smoky flavor we all know and love.

Prime Rib on Grill Ingredients
- Prime Rib Roast, I used bone in. Both bone-in and boneless will work well.
- Brown Spicy Mustard
- Coffee Rub or Prime Rib Rub
Coffee Rub for Prime Rib Ingredients
- Brown spicy mustard
- Ground coffee
- Paprika
- Granulated garlic
- Minced onion
- Brown sugar
- Salt and black pepper
Grilling Prime Rib
- Allow your prime rib roast to come to room temperature; this should take a little under 2 hours. When ready, preheat your grill to 275-300 degrees Fahrenheit.
- Rub every inch of your prime rib roast with spicy brown mustard.
- In a small mixing bowl, combine ground coffee, paprika, granulated garlic, minced onion, brown sugar, black pepper, and salt. Whisk well.
- Add the coffee rub to the rib roast and cover it completely. Let it sit for 20 minutes to soak up the rub.
- Once the grill is preheated, place prime rib on the grill and cook for 2 hours and 45 minutes, or until the internal temperature reaches 130 degrees Fahrenheit on a meat thermometer.
- Allow the roast to rest for 15-20 minutes, then slice, serve, and enjoy!
Prime Rib Grill Tips
- Your focus should be less on time and all on the internal temperature of the meat. This means you can have any weight, as far as the meat is concerned, as long as it’s 130 degrees before it comes off the grill. This may take more or less time, depending on the size.
- You’ll want to skip using the burners in the middle of your grill and use the two burners on the sides. Start them at low and then work your way up to the desired temperature.
- Don’t try to rush the cooking of this cut of meat, on a grill. It needs to be cooked slowly as it’s very thick. If not, it will cook unevenly.
- If you want to skip the grill, you can cook it the same way, at the same temperature, in the oven.
- My Coffee Rub Recipe is easy to mix and tastes incredible on a grilled rib roast. When paired with the Dijon mustard gives the rib roast the most delectable crust.
My traditional prime rib seasoning will also work well on this recipe.
What is the Perfect Temperature for Prime Rib?
The USDA recommends roast beef cooking temp be a minimum of 145°F. Follow my prime rib temperature chart for more info!

Grilled Prime Rib FAQs
A 4-pound rib roast will take approximately 2 hours and 45 minutes to grill to medium rare at 130 degrees Fahrenheit. If you're serving a larger roast, you will have to cook it for longer. To do that, use a meat thermometer to check the temperature of the roast periodically after 2 hours and 45 minutes - you want it to come to 130 degrees Fahrenheit before pulling it off of the grill.
Grill prime rib at 275-300 degrees Fahrenheit for best results.
When grilling prime rib, place the roast fat side up on the grill and close the lid. Keep it closed during the cooking time until you need to check the temperature of the roast.
You can keep an unseasoned rib roast in the refrigerator for 3-5 days before cooking.
You do not need to salt prime rib the night before but do let it sit after seasoning it for at least 20 minutes before grilling.
You will need about ½ a pound per person when the roast is part of a holiday buffet or ¾ pound per person if it’s the main course. A 4-pound prime rib will serve approximately 6 people.
Storing and Reheating Prime Rib Roast
Storing Prime Rib:
- Cooling: After your meal, allow the prime rib to cool to room temperature for about 2 hours. This helps retain its juices.
- Slicing: If you haven't already, slice the prime rib into individual portions. This makes reheating easier and ensures even heating.
- Packaging: Wrap each portion tightly in plastic wrap or aluminum foil, or place them in airtight containers. Make sure to remove as much air as possible to prevent freezer burn.
- Refrigeration: Store the wrapped or containerized prime rib in the refrigerator for up to 3-4 days. If you need to store it longer, you can freeze it for up to 2-3 months.
Reheating Prime Rib:
- Oven Method (Recommended):
- Preheat your oven to a low temperature (around 250°F or 120°C).
- Place the prime rib slices on an oven-safe dish and cover them loosely with aluminum foil to prevent drying.
- Heat for 15-20 minutes or until the internal temperature reaches your desired level.
- Check the temperature using a meat thermometer to avoid overcooking.
- Let it rest for a few minutes before serving.
- Sous Vide Method (for larger pieces):
- If you have a sous vide machine, you can reheat prime rib by placing it in a vacuum-sealed bag and immersing it in the sous vide water bath at the original cooking temperature for 30-45 minutes. Finish with a quick sear in a hot pan to get a crusty exterior.
- Microwave Method (for small portions):
- This method is less preferable as it may result in uneven heating and potentially overcooking. However, for small portions, it can work:
- Place a damp paper towel over the prime rib slices to help retain moisture.
- Reheat in 30-second bursts at medium power, checking and flipping the meat between bursts.
Remember, the goal is to reheat the prime rib gently to avoid overcooking and drying it out. The oven method is the most reliable for maintaining the quality of your prime rib, but the other methods can work in a pinch, depending on your needs and equipment. Enjoy your reheated prime rib

Instructions
- Let your rib roast come to room temperature, just under 2 hours or so.4 Pound Prime Rib
- Preheat the grill to 275-300 degrees Fahrenheit. Rub every inch of the prime rib with the spicy brown mustard.3 Tablespoon Brown Spicy Mustard
- In a small mixing bowl, combine the remaining ingredients. Whisk well.
- Rub the coffee mixture over the entire prime rib and then let it set for about 20 minutes.2 Tablespoons Ground Coffee, 2 Tablespoons Paprika, 2 Tablespoons Granulated Garlic, 2 Tablespoons Minced Onion, 1 Tablespoon Brown Sugar, 1 Tablespoon Black Pepper, 1 Tablespoon Salt
- Place on the grill and cook for about 2 hours and 45 minutes, or until the internal temperature reaches 130 degrees.
- Remove from the grill and allow to rest for about 15 minutes.
- Slice, serve, and enjoy!

This recipe is outstanding and delicious! I wasn't sure about using ground coffee, but it added a wonderful richness. I used the mustard first and the crust on the meat was perfect. I made all the rub, (cutting the salt to 1 t for health reasons). My 4.4 lb roast could not hold it all, so I saved some for another day. I cooked it indirect on our Weber gas grill and kept the temperature inside the lid at 300 degrees. I cooked it to 130 degrees internal temperature and let it sit for 15 minutes. Perfectly pink inside and very tender!
