    Filet Mignon

    Filet mignon is a steak cut I like to reserve for special occasions, so when I cook it, it's important it's cooked perfectly! Thankfully, grilling filet mignon is simple: you only need 3 ingredients and 30 minutes (and that's including the resting time!).

    Even if you've never cooked filet mignon on the grill before, I promise you'll find it easy following this recipe. The most important part is keeping track of the internal temperature so you can achieve the perfect degree of doneness. Make sure you have your meat thermometer on hand, and you're ready to go!

    Grilling Filet Mignon Ingredients

    • Filet steaks
    • Kosher salt
    • Black pepper
    • Optional: Garlic butter for steak

    It doesn't need any kind of fancy steak seasoning to really amp up the flavor of the beef. This is a flavorful cut, so all you need is a nice coating of salt and pepper.

    That said, nothing is better served over steak than a basting of garlic butter sauce! It takes hardly any time to whip up, so you can mix it after seasoning the steaks. And trust me, it is so worth it!

    If you don't have the time to make garlic butter, you can baste the steak with regular butter, as well. I would recommend using unsalted butter so you don't over-salt the steak.

    How to Cook Filet Mignon

    1. Salt and pepper all sides of your filets generously. Let it set for about 10 minutes.

    2. Heat the grill to high heat. Once the grill is screaming hot, place the filets on the grill. Do not touch them for 5-8 minutes. Then, flip them and let them cook another 5-7 minutes.

    3. Once they have been on for 10-15 minutes, check the temperature. We want the internal temp to be 130℉. If the color on them looks good but it is still not up to temp, move them to a more indirect heat location on the grill or an upper rack. Move to a cutting board when ready.

    4. Let the filets rest for about 10 minutes before serving. Make sure to slice against the grain!

    Grilled Filet Mignon Time

    The most important thing to know when calculating how long to grill filet mignon is to measure the internal temperature, and not go by an exact time.

    Make sure you're using a meat thermometer - this is really important! With a cut of beef like this, you don't want to risk overcooking it, and factors like grill heat and the thickness of your filets play a part in determining how long it takes to cook.

    My advice is to cook for 5 minutes on one side, and 5 minutes on the other. Measure the internal temperature, and if you find it still needs some time, cook it for another minute on each side and test it again. This all depends on your desired degree of doneness, too.     Filet Mignon on the Grill Tips

    • The longer you let the salt set on the filets, the deeper the salt penetrates. You can salt them and put them in the fridge in the open air for a few hours to really get a nice crust on the filets.
    • Basting some melted butter on the filets during the cook is a great idea. It is a very lean cut of meat, and any bit of fatty flavor you can add to it will go a long way!
    • Having a good meat thermometer is a necessity when it comes to grilling expensive cuts of meat like filet mignon. Make sure you have one handy, as exact times matter less than the internal temperature. The internal temperature should be your main focus.
    • If you need to add more salt and pepper than what is listed, don’t hesitate.

    Filet Mignon Recipes FAQs

    Should you marinate filet mignon before grilling?

    You do not need to marinate filet mignon before grilling. Filet mignon is already a lean cut of beef with very little fat and does not require marinating like tougher cuts of meat do. Season it just before grilling, let it soak up the salt for about 10 minutes, then cook.

    How long do you cook filet mignon on each side?

    You should always use a meat thermometer to check the internal temperature when grilling filet mignon, or cooking it in any other way. Generally, it will be ready in about 5 minutes on each side over high heat on the grill, but what's more important is to check the internal temperature for your desired degree of doneness.
